Thai Pumpkin Curry Chicken with Cilantro Lime Cauliflower Rice

Extra cozy fall foods are always a treat. What a more perfect way to enjoy a sleepy night in than a soft blanket, a scented candle and a bowl of your favorite fall foods.

Nothing shouts “fall” louder than the squash family. Pumpkins, gourds, butternut squash Autumn wing gourds and acorn squash are most commonly seen around this time of year. While gourds and pie pumpkins can be used for decor, they can also be made into some tasty, fall-inspired dishes.

Ingredients

 

1, 13.5 ounce can coconut milk

1/3 cup pumpkin puree

2 tbsp red curry paste

1 tbsp peanut sauce

1 tbsp minced garlic

1 lb chicken breasts, cubed

1 tsp salt

1 tsp curry powder

1 tsp turmeric

1/2 tsp ground ginger

1 tbsp olive oil

1 yellow onion, diced

1 yellow pepper, sliced

1 orange pepper, sliced

2 tbsp Chopped cilantro

 

Cilantro Lime Cauliflower Rice

1 head cauliflower

1 tsp salt

1/2 tsp garlic powder

2 tbsp chopped cilantro

1 tbsp olive oil

 

Thai Pumpkin Curry Chicken

In a large mixing bowl add coconut milk, pumpkin puree, red curry paste, peanut sauce and minced garlic. Whisk together until smooth. Add chicken and season with salt, curry powder, turmeric and ground ginger. Stir until well combined.

Place in the refrigerator to chill over night or at least 30 minutes before preparing.

To prepare cilantro cauliflower rice, remove stem and break cauliflower into small florets. In 3 batches, add cauliflower to a food processor and pulse 3-4 times until cauliflower has formed into rice sized portions. Add chopped cilantro and mix together.

Add 1 tablespoon of olive oil into a large skillet and heat to medium heat. Add rice and let cook for 10-12 minutes or until soft. Keep warm until ready to serve.

To prepare pumpkin curry chicken, heat a large frying pan to medium heat and add olive oil. Add sliced peppers and onions and let cook for 5-7 minutes or until softened slightly. Add chicken mixture in pumpkin curry mixture and stir. Cook for 15-20 minutes, stirring often until chicken has cooked thoroughly.

Serve pumpkin curry chicken and vegetables over warm cilantro cauliflower rice and sprinkle with chopped cilantro.
