Pumpkin Curry Shrimp and Grits (Keto)

This is going to be one of the easiest dinners you have ever made. Done in 10 minutes and completely delicious. This is always one of my go-to seafood favorites.

You can use any variety of prepared cauliflower- steamed, riced or mashed, but I love grits and their porridge-like texture. Which means I prefer mashed cauliflower over cauliflower rice with this dish.

If you don’t have time to make your own, you can buy prepared cauliflower mash just about anywhere now. Bird’s Eye and Green Giant both make a pretty good version. However, if you are like me and prefer having everything fresh and made to order, you can prepare your own at home.

Pumpkin Curry Shrimp

1 lb large cooked shrimp, de-veined (I used tail on)

1 tsp olive oil

1 tsp cajun seasoning View Here

1 tsp curry powder (I used organic curry powder with coriander, turmeric and mustard) View Here

1/2 tsp adobo

1 teaspoon lemon juice

2 tablespoons pure pumpkin puree

chopped cilantro and green onion for garnish

 

Creamy Garlic & Chive Cauliflower Mash

 

2 heads cauliflower

water to boil

1/2 cup sour cream

1 tablespoon butter

1 tbsp minced garlic

1 tsp salt

1/2 tsp garlic powder

1/2 cup shredded cheddar cheese

chives for garnish

Remove stem and cut cauliflower into small florets. Fill a large pot and heat to a boil. Add cauliflower and boil uncovered for 8 minutes.

Remove from heat and drain into a colander. Rinse, remove all water and place cauliflower, half at a time into a food processor. Add minced garlic and blend until smooth.

Scrape pureed cauliflower mash into a cheese cloth or dish towel and squeeze until excess water has drained.

Return mixture to a medium mixing bowl. Add sour cream, butter, salt and garlic powder. Stir until well mixed. Add shredded cheddar cheese and stir. Garnish with sliced chives.

To prepare shrimp, add olive oil to a large frying pan heat to medium high heat. Add shrimp and season with Cajun seasoning, curry powder and Adobo.

Let cook 6-8 minutes, stirring occasionally. Spritz with lemon juice and add pumpkin puree.

Whisk pumpkin into sauce until thickened and remove from heat.

Serve shrimp over cheesy cauliflower mash (grits). Sprinkle with chopped cilantro and sliced green onions. Serve immediately.
